Main Ingredients
- 1 whole duck (chop into 4 pieces)
- 4 lemongrass (take the white part only then crushed)
- 2 bay leaves
- 4 lime leaves
- 800 ml water
- Cooking oil
Ground Spice Ingredients
- 4 cloves of garlic
- 10 cloves of shallots
- 2 tsp coriander
- 3 cm galangale
- 2 cm ginger
- 2,5 tsp salt
- 1 tsp sugar
Sambal Matah Ingredients
- 2 cloves of garlic
- 5 cloves of shallots
- 1/2 tsp of shrimp paste (fried then grind it)
- 5 red small chillis
- 2 lemongrass (only the white part)
- 2 lime leaves
- 1,5 tsp lime water
- 3 tbsp cooking oil
- 3/4 tsp salt
- 1/4 tsp ground blackpepper
Steps
- Prepare a pot, put the duck and the spices that have already grinded in with
lemongrass, bay leaf, and lime leaf. Stir until it mixed well then pour water gradually.
- Boil the duck until it absorbs the spices and the water decreased.
- After that, heat up oil in a pan, then fry the duck until it’s cooked and crispy.
- For the Sambal Matah, chop the garlic, shallot, chilli, lemongrass, lime leaf.
- Mix it all well with oil, then add salt, blackpepper, shrimp paste, and lime water.
- Now it’s ready to serve!
